Starburst Cupcakes
Ingredients: 2 eggs
1 cup of sugar
1 cup of milk
1/3rd cup of oil
2/3rd tablespoon of baking powder
1 tablespoon of Vanilla
Pinch of Salt
1and 1/2 Cup of Cake Flour
In a mixing bowl, crack eggs (room temperature)
add in 1 cup of sugar
add 1 pinch of salt
whisk together with electric mixer until white in color
add in oil
then add in milk
add in vanilla and wisk together
Sift flour into mixture
line muffin pans and pour in mixture
let Bake on 180 degrees for 30 minutes or until a toothpick inserted comes out clean---cupcakes should be browned on top
Recommended Icing:
Pillsbury white icing with gel based food coloring with watermelon flavoring----and starbursts to top the cupcakes
